Key Lime Pie

The most popular dessert recipe request at Café Solterra, Grand Dining Room, and Courtyard at Crane restaurants is far and away this one for delectable Key Lime Pie. This traditional southern confection is a favorite throughout the region, and this recipe by Pastry Chef Carl Sears has to be the very best! One taste and you’ll agree.

Key Lime Pie
Serves 8

1 can (14 oz) Sweetened condensed milk
4 Egg yolks
7 Tbsp Key lime juice
1 9-inch Graham cracker pie crust ( We use Keebler's.)

2 cups Heavy whipping cream
3 Tbsp Sugar
1 Tsp Vanilla
Lime slices and toasted almond slivers for garnish

Preheat oven to 325 degrees F.
In medium bowl, mix together milk, yolks, and lime juice.
Pour into crust. Put in oven, bake 20-25 minutes. Filling will set.
Cool in refrigerator.
In mixing bowl, whip up cream with sugar and vanilla until stiff peaks form.
Spread the cream over the pie. Garnish. Enjoy!!
